Cashew Tofu

Ingredients

  • all ingredients can be adjusted according to your own taste.
  • 1 bundle of green onions
  • 2 cups broccoli florets
  • 3 garlic cloves
  • 1 inch of chopped fresh ginger
  • 1 pkg firm tofu
  • 1/2 cup cashew nuts
  • 1/2 cup corn starch
  • 1/4 cup sweet chili sauce
  • 1/4 cup teriyaki glaze/sauce
  • 1/4 cup water (add a little more if it gets to thick)
  • White Rice

Instructions

  1. Prepare all your items before you begin
  2. Cook your rice (Whatever amount you want)
  3. slice the green parts of onions in 1 inch slices and save for garnish
  4. thinly slice the white parts of onions and set aside
  5. Peel and chop the ginger and set aside
  6. mince the garlic and set aside
  7. Pat your tofu dry first. I drain it on paper towel. Slice and dice the tofu into 1/2 inch cubes
  8. Put your corn starch in ziplock bag and use it to shake and coat your tofu
  9. Measure up your Chili sauce, teriyaki sauce/glaze and your water and set them aside
  10. This dish moves quickly so i always have everything ready and in reach to make it go smoothly.
  11. Crisp and slightly brown the tofu, in hot olive oil, in a hot, non-stick pan, and brown on all sides stirring occasionally for 6-8 minutes. Remove to plate covered with paper towel
  12. No need to clean pan
  13. Add more oil if needed, add broccoli and white part of onions. cook and stir about 2 minutes
  14. Add water, garlic and ginger and cook until broccoli is tender
  15. Add sweet chili sauce, teriyaki glaze/sauce, cashews and browned tofu. if water has evaporated, add a couple tbs and bring to boil
  16. remove from burner ad plate the dish with the rice
  17. Enjoy!!
