Cashew Tofu
Ingredients
- all ingredients can be adjusted according to your own taste.
- 1 bundle of green onions
- 2 cups broccoli florets
- 3 garlic cloves
- 1 inch of chopped fresh ginger
- 1 pkg firm tofu
- 1/2 cup cashew nuts
- 1/2 cup corn starch
- 1/4 cup sweet chili sauce
- 1/4 cup teriyaki glaze/sauce
- 1/4 cup water (add a little more if it gets to thick)
- White Rice
Instructions
- Prepare all your items before you begin
- Cook your rice (Whatever amount you want)
- slice the green parts of onions in 1 inch slices and save for garnish
- thinly slice the white parts of onions and set aside
- Peel and chop the ginger and set aside
- mince the garlic and set aside
- Pat your tofu dry first. I drain it on paper towel. Slice and dice the tofu into 1/2 inch cubes
- Put your corn starch in ziplock bag and use it to shake and coat your tofu
- Measure up your Chili sauce, teriyaki sauce/glaze and your water and set them aside
- This dish moves quickly so i always have everything ready and in reach to make it go smoothly.
- Crisp and slightly brown the tofu, in hot olive oil, in a hot, non-stick pan, and brown on all sides stirring occasionally for 6-8 minutes. Remove to plate covered with paper towel
- No need to clean pan
- Add more oil if needed, add broccoli and white part of onions. cook and stir about 2 minutes
- Add water, garlic and ginger and cook until broccoli is tender
- Add sweet chili sauce, teriyaki glaze/sauce, cashews and browned tofu. if water has evaporated, add a couple tbs and bring to boil
- remove from burner ad plate the dish with the rice
