Black Bean Veggie Salad

Ingredients

  • 1 can black beans
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 avocado, diced
  • 1 small cucumber, diced
  • 2 roma tomatoes, diced

Instructions

  1. Mix all ingredients together and chill in fridge for an hour before serving.
  2. Other optional ingredients: You could add a package of thawed, precooked shrimp or fake crab meat for added protein
